My Blendtec

I've decided - to be a proper 95% vegan...I'll need a Blendtec. Costco had an amazing deal, Abe totally agreed with me, so we got one. It came in the mail on Friday. It is now Wednesday and I FINALLY got a chance to use my Blendtec. It was probably the best thing ever watching it blend.

I put in 2 cups of spinach, a carrot, an apple, a lemon, a lime, blueberries, and strawberries...and simply pressed the "smoothie" button. It's so easy!

Next time, I probably won't put an ENTIRE lemon and lime in the smoothie... It was a little intense. But still delicious!

Vegetarian: A Person Who Only Eats Side Dishes

Dear Journal,

WELL...I recently became 95% Vegan. I have my reasons - and no they do not consist of "feeling sorry" for the animals. I want to be as healthy as possible, and for that reason my husband and I have adopted the "eat meat sparingly" diet - or in other words, the whole foods plant based way of eating. OK, fine, I'll list my reasons...but don't argue with me - because I don't really care what you think.

  • A good friend pointed out to me that it is quite strange that humans are the only species that drink another species milk. This got me to thinking....milk is meant for INFANTS! Why I did not realize this sooner, I will never know. Human milk is meant for human babies, cow milk is meant for cow babies. It's not meant for me - end of story.
  • Research shows that those who eat meat have a higher risk for disease. I don't want disease.
  • Research shows those who eat a whole foods plant based diet are among the healthiest in the world. I'd like to be apart of that.
  • The Word of Wisdom says to eat meat sparingly, in times of winter and famine. Last time I checked, I've never been in a famine. And I have a thermostat in my house. I'm convinced that eating meat at Thanksgiving is enough for me.
So what do I eat you say? Well I'll tell you

  • Whole grains (this means WHOLE - brown rice, quinoa, millet, corn, and oats)
  • Legumes and beans
  • Veggies and fruits
  • Nuts and seeds
What I don't eat

  • Meat (fish and poultry)
  • Dairy (only 5% of my diet will be dairy)
  • Processed foods
  • Gluten
I've been eating this way for a few weeks now, and I totally love it. And yes, I get enough protein and I take a B vitamin.

My New Way of Journal-ing

Dear Journal,

As you know, I am the WORST about keeping a journal. I love journals. Mostly because I'm attracted to anything with vintage designs and paper inside of it. I buy journals, then I write one or two entries, then I never write in it again. I'm jealous of my husband who has filled up tons of journals - I on the other hand I am pathetic and cannot accomplish such a task.

I am, however, a very fast typist - and I think if I took my journalism to the internet, I would make some progress. It's so much easier to sit in front of a computer than it is to cozy up on the couch with paper and pen. And let's not even talk about hand cramps. I have a lot to say, but I don't think my hand muscles are up for the challenge.

So this is my new journal. And every journal has a theme. Each of my two entry journals have a theme. I have a prayer journal, an exercise journal, a money journal, a fun journal, a family journal, a career journal, and the list goes on! Why not put all these journals together - what with blogs having labels and everything, I can just organize my entries. It seems so easy! Let's hope I stick with it.

So back to the theme = BALANCE. All I ever search for is balance. I need a little of everything to maintain my happiness...so to maintain my happiness, my never ending goal is to maintain my balance in life. It's totally possible, but it takes work. I'm sure we all know how easy it is to get out of balance. This quote made me think of how important journal-ing can be in maintaining balance in my life.

The act of putting pen to paper encourages pause for thought, this in turn makes us think more deeply about life, which helps us regain our equilibrium. ~Norbet Platt

Hmm...Regain Equilibrium - sounds wonderful. Hopefully having this blog will remind me to always work for a balanced, healthy, and happy life. And lets hope I don't stop after just two entries!

Wish me luck!
